Chimayo Chile Sauce (Hl)
Ingredients
6 Chimayo chilies, seeded and stemmed

1/2 medium Yellow onion, sliced

2 Cloves garlic

2 cup Water

1 Bay leaf

Salt to taste

Preparation
Combine all ingredients except salt in a sauce pan and bring to a boil. Simmer for 10 minutes. Remove from heat and blend until very smooth adding water if necessary. Salt to taste. Strain through fine mesh strainer.

Yield: 6 servings

Nutritional Information: 46 Calories, 0.2 grams of fat per serving
